Bee balm (Monarda didyma) begins the brew, wild mountain mint (Pycanthemum incanum) and wintergreen/teaberry (Gaultheria procumbens) pick up the minty side of things, while the leaves of sassafras (Sassafras albidum), serviceberry (Amelanchier laevis) and spicebush (Lindera benzoin) carry the spice notes. Tart sumac berry (Rhus glabra) and piney Fraser fir tips (Abies fraseri) top off this wild mountain medley.
Nice to steep but even better to simmer for a good long time (20-30 minutes), strain, and sip with a bit of honey. The bee tea comes in a cream muslin drawstring sack with red stitching.
